If you have ever grown cucumbers or zucchini then you know that you will be blessed with an abundance of each by summers end. Today's recipe for Refrigerator Sweet Pickles is from the cucumbers, onions and bell peppers that we harvested late last summer. For some reason I forgot to post this recipe on my blog and it's too good not to post.

{summer 2016}

By the time your cucumber plants start producing they can get out of control pretty quickly yielding 3-4 cukes per vine per day. Before you know it you'll have cucumbers growing out of your ears. This recipe is a great way to use cucumbers and onions from your garden, but in my case, cucumbers, onions and bell peppers.

I found this recipe last year on one of my favorite blogs and I've made it 3 times since finding it. The best part about this recipe is that these crunchy pickles will keep in the refrigerator for up to 2 months without having to be processed. These sweet-crunchy pickles are easy to throw together and perfect for sharing with family and friends. I hope you'll give this recipe a try!

This is fantastic. I grew cucumbers for years and had such good luck with them. We literally had to give so many away. This recipe sounds like the perfect way to can and store or even give as gifts.

OMG I love pickled vegetables but never thought to pickle my own! I really have to give this a try! Do you have to include the sugar? Is it too sour without it? We try not to use any sugar in anything because of our kids - We don't even have any in the house.

FAQs

What is the ratio of vinegar to water for refrigerator pickles? ›

The basic ratio for quick pickles is 1:1 vinegar to water, and includes some combination of salt and sugar. Another ratio that is commonly followed is the 3:2:1 method, using three parts vinegar, two parts water, and 1 part sugar.

How long should refrigerator pickles sit before eating? ›

The cucumbers will start off bright green, but will become darker and more "pickle-colored" as they cool. Place them in the refrigerator. Wait at least 24 hours before eating the pickles in order to let the flavors develop. Enjoy them within 1 month.

How long do sweet pickles last in the refrigerator? ›

How long do refrigerator pickles last? Homemade refrigerated pickles last at least three to four weeks in the fridge, McClellan says. Any longer and the quality will start to decline. You'll notice the brine goes from clear to murky and cloudy, and the pickles start to lose their texture.

What is the difference between canning pickles and refrigerator pickles? ›

Refrigerator pickles, or quick pickles. These guys aren't shelf-stable (meaning that they need to stay chilled in the refrigerator rather than at room temperature), and they won't last as long as canned pickles, but then again they don't need to because they are so delicious, crisp, and versatile.

What happens if you put too much vinegar in pickles? ›

Overpowering flavor: Vinegar has a strong, tangy taste, and adding too much can overpower the other flavors in the dish. This can result in an unbalanced and excessively sour or acidic taste.

How to make homemade pickle solution? ›

For quick pickles, a basic brine is equal parts vinegar and water, but you can adjust the ratio to your preference. Any basic vinegar is game — white vinegar, apple cider, white wine, and rice vinegar all work well. You can use these vinegars alone or in combination.

Do you have to boil jars for refrigerator pickles? ›

Sterilizing jars and standing over a steamy water bath for hours is not the most pleasurable way to spend a summer day! You can skip that whole process and make the next best thing – refrigerator pickles.

Can refrigerator pickles go bad? ›

"As long as the pickles are kept cold, they can last upwards of 75 days unopened in the fridge," Andre shares. Once opened, any pickles should be stored in the fridge, submerged in brine, to maintain freshness for at least up to three months, according to the USDA.

How to make your homemade pickles crunchy? ›

The best way to keep your pickles crisp is by taking an extra moment to remove the blossom from the end of the cucumber. By adding this extra cut, you have a crisper pickle. Other ways to ensure a crisp pickle is by adding grape leaves to your jar. I tend to cut off both ends of the cucumber as I quickly process them.

Is it OK to eat 2 year expired pickles? ›

One more thing that makes them perfect: they can last a really, really long time. Pickles can last for as long as 1-2 years past the expiration date printed on their jars. That's whether you store them in the refrigerator or not, provided they've been properly sealed.

Why do pickle jars not say pickle? ›

Olive all use the term on their websites, in advertisem*nts, and in the product descriptions of their pickle varieties. When asked why the word isn't on the front of the jars, all three companies provided nearly the same answer: They feel the word “pickle” isn't necessary on pickles packaged in clear glass containers.

Are 2 year old pickles still good? ›

An unopened jar of pickles can be stored at room temperature (i.e., the pantry) or in the fridge for up to two years past the expiration date. Once opened, pickles will stay fresh for roughly the same length of time as long as they are stored in the refrigerator in a tightly sealed container.

Can I water bath refrigerator pickles? ›

Fridge pickling is a one-way equation. Any waterbath canning recipe can be turned into a fridge pickle, but any fridge pickle may NOT be turned into a waterbath-safe recipe.

Do refrigerator pickles ferment? ›

This is known as refrigerator pickling. Because the cucumber is neither cooked nor fermented, this is perhaps the crispiest pickle that can be made. However, it must be kept refrigerated at all times, so it is not as useful for preserving large batches of cukes at one time.

Do I need to sterilize canning jars for refrigerator pickles? ›

The best thing about Joanne's pickles is that they're quick and easy — no sterilizing jars or special canning equipment required. All you do is slice Kirby cucumbers into spears, cover them with brine, tuck them into the fridge, and they're ready to eat the next day.

What is the ratio of liquid to pickles? ›

Some swear by the 2:1:1 ratio (2 parts vinegar to 1 part water to 1 part sugar). Others use a modified 5:3:2:1 or 9:5:3:1 (vinegar:water:sugar:salt). Some start off the pickling process hot, others will insist on waiting for the pickling liquid to cool down.

What is a good water to vinegar ratio? ›

For use around the home, combine vinegar with water in a 1:1 solution to clean and freshen many surfaces. Use this solution on glass, windows, walls, cupboards, floors, sinks, stovetops and coffee makers.

What is the best concentration of vinegar for pickling? ›

Picklers should look for a pickling vinegar with 5% acetic acid concentration or higher. This is to ensure your vinegar is acidic enough to prevent the growth of bacteria and mould in your pickle jars. The more acidic the vinegar, the longer your pickles will last.

How do you fix refrigerator pickles that are too vinegary? ›

Dilution: If your pickles are in a brine or vinegar solution, you can dilute it by adding more water or vinegar (depending on the recipe). This will reduce the overall salt.
