Questions & Replies

  1. Why is chicken broth listed in the ingredients? Don't most ziti recipes have ricotta or cottage cheese or cream cheese in them?

    Tina G.

  2. Has anyone made this a day ahead and put in frig overnight?

    Anne R.

  3. Add the entire jar of spaghetti sauce with the chicken broth and oregano. Once that has simmered when the term 'sauce' is used it is the combination of everything. Hope this answers your question :)

  4. How much sauce do you mix in with the beef at the beginning?

  1. You know, I had never had baked ziti before - even eating out. I found this recipe when I was "on the prowl" for something totally different a couple of nights ago. Followed the recipe to a tee (except I subbed salt-free homemade meatless sauce and low-sodium chicken broth so that I could enjoy it without feeling guilty!) and BINGO! I was in business. Served it with a very crisp green salad topped with very spicy Greek olive oil dressing and my homemade sourdough croutons, and it was a meal to remember.

  2. Delicious. I added lots of sliced mushrooms with the mince because I love them. I will make this again many times.

  3. This was another great dish. Made plenty, ate the leftovers the next day, it tasted even better if that is possible.

  4. This was very good..my family loved it..definitely filled a 9 x 13 pan..thanks for sharing this recipe.

  5. I made this tonight and followed Miller's lead using homemade meat sauce (only kind I had). I don't know if it was the addition of the chicken stock, but this was just delicious. I thought that the proportion of sauce/liquid to pasta was perfect, and reducing either would have resulted in a skimpy dish. I was careful to leave the boiled pasta undercooked so that by the time it came out of the oven it still had some bite to it. Thank you for a wonderful recipe, we'll make it often!

Tweaks

  1. I had been using another web site that recommended using cottage cheese instead of ricotta. I used it tonight to make this and it tasted great.

  2. This was quite good. I used penne instead of ziti and made my own sauce. There is no amount given for the mozzarella. Near as I can tell, you need 3 cups.

  3. With whole wheat penne pasta instead of ziti pasta. Fantastic!

  4. I enjoyed this recipe. It was very easy to prepare. I was surprised by the addition of chicken broth. I think it gave the "prepared sauce" more of a home made flavor. The recipe makes a big dish of food so it's great for feeding a crowd. I used ground sirloin instead of hamburger and added a little olive oil to cook the sirloin and the onions.

  5. I used two pounds of ground beef instead of one and some homemade sauce my husband made over the summer, and subbed egg noodles for ziti. Did not have as much mozzarella as I though so had to use a lot of monterey jack, but it still turned out fabulous!

FAQs

Should you bake ziti covered or uncovered? ›

Whether refrigerated or frozen and defrosted, bake, covered tightly with aluminum foil, in a 425°F oven for 25 minutes. Then uncover and bake for another 10 to 15 minutes, until the cheese is lightly browned and the pasta is hot throughout.

How do you keep baked ziti moist? ›

Layering is important (but easy!)

Layer half the mozzarella into the pasta and reserve half for the top. It bakes up golden-brown — the hallmark of a good pasta casserole. Make sure there is enough sauce to use as a layer at the top, under the mozzarella. This will insulate the pasta and keep it from drying out.

How long do you heat baked ziti in the oven? ›

Oven. To reheat baked ziti that has been refrigerated, preheat your oven to 350 degrees. Again, if it is in a glass dish, be sure that the glass has come to room temperature first to avoid cracking. Cover the oven-safe dish with aluminum foil and bake for around 35-45 minutes.

Does baked ziti contain ricotta cheese? ›

Ricotta cheese – It creates a creamy layer in the center of the baked ziti. For the best texture, make sure to use whole milk ricotta in this recipe.

Should you undercook ziti before baking? ›

(You want to undercook the pasta slightly, as it will continue to cook in the oven. A good way to do this is cook it 2 minutes less than you normally would if preparing it al dente.) Reserving 1 cup of the pasta cooking liquid, drain pasta and rinse with cool water; set aside while the tomato sauce finishes cooking.

How long can baked ziti sit out before it goes bad? ›

Don't let your freshly cooked Baked Ziti sit at room temperature for more than 2 hours before refrigerating. This prevents bacterial growth. When reheating your chilled Baked Ziti, make sure that it is heated thoroughly. This should sanitize any potential bacterial growth that may have occurred during storage.

What makes baked ziti dry? ›

Make sure to toss your ziti with plenty of sauce

But we've all likely sunk a fork into a baked ziti that's just too dry, seeming like a conglomeration of noodles instead of a moist sum of its parts. That pitfall, according to The Kitchn, is almost always due to not saucing the ziti adequately.

Can baked ziti be left out overnight? ›

Baked ziti should not sit out longer than 2 hours after baking because that is when bacteria will start to grow. Refrigerate as soon as cooled.

Why is my baked ziti so watery? ›

Oftentimes, baked ziti can end up watery if the tomato sauce isn't thick enough. Luckily this recipe calls for the tomato sauce to simmer on the stove along with the ground beef and onion. Doing this will help to get rid of some of the extra water in the sauce.

How to spice up leftover baked ziti? ›

You can load it up with ground beef, Italian sausage and meat sauce if that's your thing. You can also leave it the pasta, cheese and tomato sauce. The only problem with baked ziti, and I don't really think this is a problem…is that it's one of those pasta dishes where there are always leftovers.

What do Italians use instead of ricotta? ›

Mascarpone: Another Italian cheese, mascarpone makes a great ricotta substitute. However, since mascarpone is more tart and flavorful, you should only use it in dishes with other strong flavors.

What do Italians use instead of ricotta in lasagna? ›

Hold on there. Not in Italy! If you Google authentic Italian lasagna you will find that Italians use béchamel sauce and NOT ricotta in their recipe.

Why add egg to ricotta? ›

For extra creamy ricotta, add in an extra egg, a handful of grated parmesan, and a quarter cup of shredded mozzarella. Eggs help prevent the ricotta from drying out and serve to bind the ricotta so it doesn't become runny. One or more eggs are recommended whether you add the other ingredients mentioned here or not.

Should you cook pasta covered or uncovered? ›

Should you cover the pasta when cooking it? It's okay to put a lid on the pot while you are waiting for the water to boil. However, after it starts to boil and you add the pasta to the water, you should remove the lid to prevent the water from bubbling over.

Should pasta be covered while baking? ›

Leaving the pot uncovered is also key because pasta should be stirred frequently to prevent sticking. Plus, because pasta should be cooked until al dente, a lid will make it hard to decipher how far along you are in the process, and might even lead to mushy noodles, which is the last thing you want.

Should I bake my lasagna covered or uncovered? ›

If uncovered, the prolonged exposure to heat will quickly dry out your lasagna, no matter how much sauce you've added. Make sure to always add a layer of tin foil over your baking dish, which will trap the moisture inside while still allowing the dish to cook properly.

Do you put a lid on pasta bake? ›

Cover the dish lightly with tin foil and bake it for 35 minutes. Make sure that the foil is not touching the cheese. Bake uncovered for another 10 to 15 minutes. The center should be bubbly and heated through.
